Pasta with Ricotta, Capers and Olives
serves 4
Ingredients
- 1 lb pasta, your choice of type, cooked
- 2/3 C black olives, pitted, coarse chop
- 1/3 C olive oil
- 1/4 C capers
- 2 cl garlic, fine chop
- 3 T chives, fine chop
- 1 1/2 C ricotta cheese
- 1 1/4 C whole milk
Instructions
- Mix together the olives, oil, capers, garlic and chives.
- Warm the cheese and milk in a saucepan, season, then remove from heat.
- Toss the pasta into the milk and cheese mixture, then mix in 2/3 of the oil and olive mixture.
- Plate, garnish with the remaining oil and olive mixture, and serve.
